1. Matera, Italy: the cave city at Christmas

2. Oaxaca, Mexico: the Night of the Radishes

Best time: 23 December, and the dry season from November to March
Every 23 December since 1897, Oaxaca City has held the Night of the Radishes. More than 100 contestants carve oversized radishes into nativity scenes, local legends and village life. It lasts only a few hours in the late afternoon and evening, because the radishes wilt quickly once cut.
Winter is also Oaxaca's dry season, the best time for its markets, mole kitchens and the mezcal villages outside the city.

You cannot just turn up
